Stir-Grilled Spaghetti with Meat Sauce and a Kiss of Smoke
No, you're not reading this wrong. You really can do spaghetti on the grillâto a point. When Judith was in Girl Scouts, back in the Dark Ages, she used to make coffee-can suppers over the campfire and wondered why the mixture of ground beef, onions, and spaghetti with meat sauce didn't taste the same when cooked on the stove at home. (Ah, yes, even then she loved to eat well.) The reason? Wood smoke flavoring. Here, you can have that flavor (without actually camping out, unless you want to) in your own backyard. On a gas grill, use a foil packet with holes poked through the top to enclose 1 cup of dry wood chips or ¼ cup dry wood pellets. On a charcoal grill, add moistened wood chips or a foil packet containing dry wood pellets directly to the coals after the fire is hot.
